Cucumber Sandwich

Ingredients
  

1 tablespoon lemon juice

  • 1 tablespoon chives or green onions, chopped
  • 1 tablespoon dill, chopped
  • 1 teaspoon parsley, chopped
  • Salt and pepper to taste
  • 2 cucumbers, peeled and thinly sliced
  • 8 slices of white bread, crusts removed

Instructions
 

  • In a medium bowl, combine the softened cream cheese, mayonnaise, lemon juice, chives, dill, parsley, salt, and pepper. Mix until smooth and well blended.

  • Take two slices of bread and spread an even layer of the cream cheese mixture on each one.
  • Arrange the cucumber slices evenly over one slice of bread. Then, place the second slice on top to form a sandwich.
  • Gently press the sandwich together and cut it in half diagonally to create triangles.
  • Serve immediately, or refrigerate for up to an hour before serving to let the flavors meld.
